I had a very long week last week, so all I wanted to do was stay in once Friday rolled around. I wanted to relax, catch up on some shows, and eat a delicious meal. Since I had no plans, I ran to the grocery store to get a few things and thought I’d try to whip something up. I had no specific recipes in mind while I was there, so I picked up my usual ingredients for turkey sandwiches, chicken dishes and snacks. Quite the grocery list!

I was craving chicken parmesan, but I’m not a huge fan of a lot of tomato sauce, so I decided to forgo that all together. I also wanted something healthy. I took a look at what I bought from the store and what I had laying around the house. I decided to create my own ‘Cheesy Baked Chicken!’

I doused the bottom of my baking dish in olive oil, then lathered up the chickens in it too (I love olive oil if you couldn’t tell). I shook some oregano on top, added in spinach leaves and cut up baby roma tomatoes in half to finish, and baked the dish for 35 minutes. Once the chicken was almost done, I added a generous portion of Italian Cheese and crushed croutons to get a crust. I put it back in the oven for 10 more minutes and that was it! Super simple and delicious.

I eat half for dinner that night and the leftovers made for another great meal. I can definitely see me making this easy chicken dish again!Β And maybe next time, I’ll share πŸ™‚

Instructions
  1. Pour olive oil along bottom of casserole dish and add chicken. Next, add spinach, roma tomatoes, and oregano on top. Then, bake at 350 degrees for 35 minutes.
  2. Remove from oven once chicken is done. Add plentiful cheese and crushed croutons over top, and bake for another 10 minutes.
  3. The end result!
