Anyone that knows me knows that my favorite meal of the day is breakfast. And they also know that I’m not a very good cook. As you can see from my previous Cheesy Baked Chicken recipe, I like recipes that are quick and easy.
While I’m getting better at cooking, there’s so many different variables as to why I don’t make my own food too often. I’ll share:
1. Every time I actually go to the grocery store, I don’t eat my food in time and it spoils.
2. I’m impatient. When I want food, I want it NOW.
3. It tastes better when someone else makes it for me.
Pretty solid excuses, am I right?
Well folks, this past Saturday morning, I woke up hangover free and made it to Treasure Island, the closest grocery store to my apartment, (before 10am I have to mention) and bought a few things for the upcoming week! With the main focus being on what I can make for breakfast foods. Hopefully I can eat all the chicken, spinach, pre-sliced peppers (laziness), avocados and eggs before their ‘expire by date’ this time!
I went for a five mile run when I got back from the grocery store because remember I was hangover free. (Note to self: be this productive more often)! By the time I got back I was more than ready to indulge in some breakfast.
Luckily, I had a breakfast scramble in mind that I could whip up and enjoy in no time! What really makes this breakfast scramble is al fresco’s all natural chicken sausage. I am OBSESSED! I always choose the sweet apple flavor with a hint of Vermont maple syrup because it’s so perfect for breakfast, lunch or dinner. I highly recommend trying out al fresco’s chicken sausage!
This chicken sausage breakfast scramble is one of my favorites. It’s so simple and so delicious. And it’s also very colorful, which I’ve heard – the more color in your dish, the more healthy it is for you. It only calls for five ingredients, depending on how much you want to add to your scramble and how many people you’re making it for. I’m personally trying out this ‘no cheese’ thing before swimsuit season arrives, but next time, I’ll definitely load it with some cheese. This no cheese diet won’t last long.
