I’m not one to make brunch often, simply because I like going out for brunch where other people (who are way better at cooking) can make my meal for me! That’s the laziness in me on the weekends. But, going out for brunch every weekend can get expensive. My boyfriend and I decided that we should try to make our own brunch this weekend, so we gave it a whirl! I’ve been salivating over breakfast casserole recipes online trying to find the best one. When we got to Whole Foods, I decided to just make one up in my mind. I wanted it to be fast and easy, as our bellies were growling at us already.
I started picking up fresh vegetables, when out of the corner of my eye, I found the packages of pre-sliced vegetables. How awesome and lazy is that?! I picked up a container of sliced red, green and yellow peppers. Then, I found the cut up box of onions and tomatoes (which was essentially salsa). The casserole was veggie-only, so the last items I needed was the cheese, spinach and the eggs (dur).
I beat all twelve eggs to fill the baking pan and added in the sliced vegetables and spinach. The different colors of the peppers, onions and tomatoes in the eggs looked very pretty! I also added some water to fluff up the eggs. I put the pan in the oven with all the ingredients for 50 minutes at 350 degrees. I took it out to add cheese for the top and put it back in for another 5 minutes and it was ready! This super easy breakfast casserole was also delicious, and I’m already thinking of more items to add for next time!
